Tbilisi (literally "warm place," after its sulphur springs) is Georgia's capital and its cultural heart. Founded in the 5th century, the city has been a crossroads for Persian, Mongol, Ottoman, and Russian empires — every layer of conquest is visible in the architecture, the food, and the religious mix of orthodox cathedrals, mosques, and synagogues clustered within walking distance.
Modern Tbilisi is the Caucasus's most creative city: independent designers, third-wave coffee shops, and natural-wine bars have moved into the Old Town's 19th-century courtyard houses. Walk Rustaveli Avenue at sunset, ride the cable car up to Narikala fortress, then descend into the sulphur bathhouses in Abanotubani. Three days is the right minimum.
